Raw Cacao Coconut Mousse

I have always had a love for chocolate mousse, it is one of the best desserts and for me, it was one that I would be very happy to see on the menu until of course, I became vegan.

Recently I have been trying to create some recipes with the raw cacao powder I have from Elements For Life and decided it was time to create a coconut mousse.

This recipe is for 2 mousses, though you can double for 4 if you want to make it sweeter or prefer the richness of the cacao then simply add less or more maple syrup.

This is such a quick recipe though you may want to tweak the flavours to your preference, you can add whatever essence you like instead of coconut though I find that this is a really nice combination with the cacao.

Let’s get straight to it because if you are anything like me you just want to have it made and eat it already!

Ingredients –

1 1/2 cups x vegan coconut yoghurt
2 tablespoons x coconut essence
1 tablespoon x coconut oil
4 tablespoons x maple syrup
4 tablespoons x raw cacao powder
4 tablespoons x ground almonds
4 tablespoons x dessicated coconut

Method –

  1. Add the yoghurt, cacao, maple syrup and essence to a bowl and mix together well until all is starting to form into a wet mix.
  2. Then add the coconut oil and stir again this should now resemble a mouse like texture.
  3. Spoon the mixture into 2 separate ramekins and add the ground almond and desiccated coconut for a decorative and delicious topping.
  4. Allow to set in the fridge for an hour or so until it is a little more formed.
